1 dozen large eggs

Instructions

Heat a drizzle of olive oil or a pat of butter in a large pan over medium heat. Add the diced onion and bell peppers, cooking for about 5-7 minutes until they’re softened but still vibrant. Season with a pinch of salt and pepper to taste. Remove from heat and set aside.Crisp the Turkey Bacon:
Roughly chop the uncured turkey bacon and cook it in the same pan over medium heat. Sauté for 5-6 minutes until crispy and golden. Once cooked, remove from the pan and set aside.Prepare the Egg Mixture:
Crack all 12 eggs into a large bowl. Beat them together with a fork or whisk until fully combined, adding a little salt and pepper to taste.Assemble the Bake:
Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish. Add the sautéed onions, bell peppers, and crispy turkey bacon to the dish. Pour the beaten eggs over the top, making sure everything is evenly distributed.Top with Cheese & Bake:
