Mocha Baked Oatmeal

Ingredients:

  • 1 1/2 cups rolled oats

  • 1 tsp baking powder

  • Pinch of cinnamon

  • 1 cup mashed banana (about 2 ripe bananas)

  • 1/2 cup unsweetened milk (your choice—almond, oat, etc.)

  • 1/2 cup decaf coffee, chilled

  • 1/4 cup pure maple syrup

  • 1 heaping tablespoon unsweetened cocoa powder

  • 1 tbsp peanut butter (or almond butter)

  • Chocolate chips (optional, but highly recommended for a little extra indulgence)

Instructions:

  1. Preheat the oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.

  2. In a large bowl, combine all ingredients except for the chocolate chips. Stir until everything is fully incorporated into a smooth, thick batter.

  3. Pour the batter into your greased pan and spread it evenly.

  4. Top with chocolate chips, if desired, for an extra burst of chocolatey goodness.

  5. Bake for 25-30 minutes, or until the oatmeal is set and slightly golden around the edges. A toothpick inserted into the center should come out clean.
