Mocha Baked Oatmeal

Ingredients:
1 1/2 cups rolled oats
1 tsp baking powder
Pinch of cinnamon
1 cup mashed banana (about 2 ripe bananas)
1/2 cup unsweetened milk (your choice—almond, oat, etc.)
1/2 cup decaf coffee, chilled
1/4 cup pure maple syrup
1 heaping tablespoon unsweetened cocoa powder
1 tbsp peanut butter (or almond butter)
Chocolate chips (optional, but highly recommended for a little extra indulgence)
Instructions:
Preheat the oven to 350°F (175°C) and lightly grease an 8x8-inch baking dish.
In a large bowl, combine all ingredients except for the chocolate chips. Stir until everything is fully incorporated into a smooth, thick batter.
Pour the batter into your greased pan and spread it evenly.
